Recipes of the MonthCreamy Vegetable and Pineapple Slaw
Ingredients:
1 head of cabbage, shredded 1 stalk of celery, sliced 1 green pepper, sliced in strips 1 large tomato, cut in wedges 1/2 fresh pineapple, diced 1 teaspoon salt 1/8 teaspoon pepper 1 cup plain yogurt 2 tablespoons sour cream 2 tablespoons milk
Instructions:
Place the cabbage in a large bowl. Add the celery, green peppers, tomatoes and pineapple. Toss together well. Sprinkle in the salt and pepper and toss one more time to incorporate. Place yogurt in a mixing bowl. Add the sour cream and stir a couple of times to incorporate. Place the milk into the mixture. Use an electric mixer on low speed to blend together. When finished you should have a heavy cream. Pour enough dressing over the salad to give it a creamy consistency. Allow to set 5 minutes before serving.
------------------------------Citrus Chicken and Pasta Salad
Ingredients:
1 cup mayonnaise 1/4 cup orange juice 4 chicken breasts, boneless, skinless and thawed 2 cup pasta, any kind 1 cantaloupe, diced
Instructions:
Place the mayonnaise into a large mixing bowl. Add the orange juice and mix together well being sure that the mixture becomes very smooth. Cover and place in the refrigerator until ready to serve. Set the oven on 375 degrees. Place the chicken breast in a shallow baking pan. Bake 25 minutes. Chicken will be done when juices run clear when pierced with a fork. Remove from the oven and allow cooling. Once the chicken has cooled enough to work with, use a sharp knife to dice it into small chunks. Cook the pasta as directed on the package. Rinse with cool water and drain well. Place the pasta into a large serving bowl. Add the diced chicken and blend well. Remove the orange juice mixture from the refrigerator and pour over the top of the pasta and chicken. Use a rubber spatula to stir the ingredients together. Add the cantaloupe and stir to incorporate. Cover and refrigerate for up to 3 hours. Salad should be cold when served. ------------------------------Freezer Summer Fruit Salad
Ingredients:
1 tablespoon water 1 tablespoon lemon juice 1 teaspoon gelatin unflavored 1 tablespoon confectioner's sugar 1 (3 ounce) package cream cheese, room temperature 1/3 cup mayonnaise 1/3 cup heavy cream 2 cups fresh fruit, diced (any fruit will work)
Instructions:
Combine the water and lemon juice together in a custard cup. Add the gelatin and sugar and stir slightly. Place a scant amount of water in a small sauce pan over low heat. Bring to a boil. Place the custard cup into the boiling water. Lower the heat to low. Allow the mixture to simmer, stir constantly, until the gelatin has completely dissolved. In a mixing bowl combine the cream cheese and mayonnaise. Stir until the mixture is smooth. Add the gelatin mixture and blend well. With an electric mixer whip the heavy cream until peaks begin to form. Blend the cream into the gelatin mixture. Add the fruit and stir gently until fruit is completely worked into the gelatin. Pour into a square glass pan. Cover and place in the freezer until frozen.
------------------------------Parmesan Sticks - I really like this one so I am keeping it up one more month for anyone who has not seen it. Ingredients:1 tablespoon active dry yeast1 cup warm water2 1/2 cups unbleached white flour2 tablespoons canola oil1 teaspoon sugar1 teaspoon salt1 stick of butter, meltedParmesan cheeseInstructions:Place the yeast in a mixing bowl. Add the warm water and stir until the yeast is completely dissolved. Mix together the flour, salt and sugar in a separate bowl. Add the oil to the yeast and gradually add the flour mixture. Mix until the dough becomes stiff.Once the dough is stiff place it on a floured surface. Knead until the dough become smooth. Grease a bowl with a little canola oil on the bottom and up the sides. Roll the dough into a ball and place it in the prepared bowl. Cover with a towel and allow to sit 30 minutes. Dough should double in size. Preheat the oven to 350 degrees. On a floured surface roll the dough out with a rolling pin to form 2 circles about 12 inches wide. Brush the dough with the melted butter. Sprinkle with the Parmesan cheese. Cut into 2 inch strips. Place the strips on a cookie sheet. Bake 18 minutes or until golden brown. ------------------------------
